Burrito Casserole
This is a tasty and filling casserole that is loaded with rice, beans, cheese, and tortillas. It has a Mexican flavor from the salsa and taco seasoning.
Ingredients
- 1 pound ground beef or turkey
- 1 onion, finely chopped
- 1 bell pepper, diced
- 1 can (15 ounces) black beans, drained and rinsed
- 1 can (15 ounces) corn, drained
- 1 cup salsa
- 1 packet taco seasoning
- 2 cups cooked rice
- 2 cups shredded cheese (cheddar, Monterey Jack, or a blend)
- Tortillas (flour or corn), cut into bite-sized pieces
- Optional toppings: sour cream, guacamole, diced tomatoes, chopped green onions, cilantro
Directions
- Preheat your oven to 350°F (175°C).
- In a large skillet, cook the ground beef or turkey over medium heat until browned. Add the chopped onion and bell pepper, cooking until the vegetables are softened.
- Stir in the black beans, corn, salsa, and taco seasoning. Let the mixture simmer for a few minutes to allow the flavors to blend.
- In a large mixing bowl, combine the cooked rice with the meat and vegetable mixture.
- In a greased casserole dish, layer half of the rice and meat mixture. Top with a layer of tortilla pieces and half of the shredded cheese.
- Repeat the layers, finishing with a layer of cheese on top.
- Cover the casserole dish with aluminum foil and bake in the preheated oven for about 20-25 minutes or until the cheese is melted and bubbly.
- Remove the foil and bake for an additional 5-10 minutes or until the top is golden brown.
- Allow the casserole to cool for a few minutes before serving. Top with your favorite toppings like sour cream, guacamole, diced tomatoes, green onions, or cilantro.
