Lasagna Soup

This soup is a hearty and comforting dish that tastes like lasagna in a bowl. It is made with ground beef, onion, bell pepper, garlic, thyme, Italian seasoning, chicken broth, diced tomatoes, tomato sauce, lasagna noodles, Parmesan cheese, and mozzarella cheese.

Lasagna Soup Recipe


Ingredients:

  • 1 pound ground beef
  • 1 small onion, diced
  • 1 green bell pepper, diced
  • 3 cloves garlic, minced
  • 1 teaspoon ground thyme
  • 2 teaspoons Italian seasoning
  • ½ teaspoon salt
  • 1 tablespoon brown sugar
  • A 32-ounce carton of chicken broth
  • 2 (14.5 ounces) cans of petite diced tomatoes
  • 15-ounce can of tomato sauce
  • 2 cups broken lasagna noodles
  • ½ cup Parmesan cheese grated
  • 2 cups mozzarella cheese shredded

Instructions:

  1. Brown and crumble the ground beef in a large saucepan with the onion, bell pepper, and garlic over medium-high heat. Drain the excess grease and return the beef mixture to the pot.
  2. Add the thyme, Italian seasoning, salt, brown sugar, chicken broth, diced tomatoes, and tomato sauce. Stir well and bring to a boil.
  3. Reduce the heat and cover the pot. Let it simmer gently for 20 minutes, stirring occasionally.
  4. Stir in the lasagna noodles and cook for another 10 minutes, or until the noodles are tender.
  5. Stir in the Parmesan cheese and serve the soup in bowls. Sprinkle with mozzarella cheese on top.
